  1. 3 pounds crawfish tail meat

  3. 1/2 teaspoon cayenne pepper

  5. 2 tablespoons canola oil
  6. 1⁄3 cup finely chopped green onion, green parts only
  7. 1 cup finely chopped onion
  8. ½ cup finely chopped green bell pepper
  9. ½ cup finely chopped celery
  10. ¼ teaspoon minced garlic
  11. 3 cups cooked long-grain white rice
  12. 2 tablespoons finely chopped parsley
  13. 8 ounces prepared hog casings
  14. Garnish: stone-ground mustard
